Acacia honey is known for its therapeutic properties, acting as a general tonic. It’s almost colorless, with shades from straw yellow to light yellow, and has the aroma of acacia flowers. Acacia honey crystallizes slowly, sometimes taking up to two years, depending on the storage temperature. Acacia honey has the highest fructose content compared to other honey types (41.7%), contains 10% sucrose and maltose, and 34.7% glucose, with a pH of 4. Acacia honey contains carbohydrates, proteins, minerals (Ca, Cu, Fe, Mg, Mn, P, K, Si, Na, S), vitamins (B1, B2, B6), folic acid, enzymes, flavones, flavonoids, aromatic compounds, etc.
